Even if one tunes a PC or Mac for audio, it can never beat the
performance of a dedicated piece of audio hardware -- even a piece of
Windows CE/Embedded or embedded Linux, which I suspect might be inside a
Mojo 61.  By its very nature, a laptop is a general-purpose computer,
capable of many things, and there's only so much priority that can be
given to audio tasks.  Even if one says, "Audio is the #1 priority,"
there are functions and methods defined in the OS that allow for other
interruptions, and they are next to impossible to completely bypass.

Embedded computers generally have less restrictions in this respect. 
They also can tune communications for their exact audio hardware.  And
finally, they don't need to talk to the keyboard via MIDI; they can
communicate directly to the scanning hardware.  All of these things help
to drop the latency to near-zero.
