The VMK-161 is not a popular controller.. the keys are odd and its buggy (from what I've heard). Personally, I wouldn't recommend it.

I think you should decide how serious you are about wanting to recreate a real organ experience and then we will be able to provide better advice.

First question, whats your budget? If cash is tight I would just pick up GSI's VB3 VST, and a 61 note controller with 9 slider/faders so that you can manipulate them in real time.. This is much better than those NI Vintage Organs (which sound OK but cannot be manipulated via drawbars). For a bit more cash you can have a VR-09, and it is tremendous value (which you would probably appreciate as a newbie). It has Drawbar organ, Combo organ, comprehensive set of sounds (acoustic/electric pianos, strings, brass, etc.) PLUS a full virtual analog synth, with free iPad editor.. You might also consider a Hammond SK1, but as a newbie I'm not sure you would really appreciate the main advantage it has over the VR-09 which is a waterfall style keyboard like a real Hammond..

As a newbie who's probably looking for a keyboard that does a LOT, I would probably recommend the VR-09, and then if you really get serious about organ and want the waterfall keyboard, you might move to a Nord or Hammond.

One other suggestion, if you only want organ sounds, and don't care about pianos and other sounds, you might consider the Hammond XK1c or the new Studio Logic Numa 2.
