Once you play an organ with 5 manuals, a 32-note concave radiating pedalboard, 18 ranks of strings, en-chamade reeds, and a full antiphonal division, you'll never want to go back. Nevertheless, you can play jazz on an ocarina, if you are sufficiently motivated. If you want to play jazz organ in accordance with the usual in-the-box standard, I.E., left hand bass & right hand solo, then you will need either two manuals or one manual with split capability.
