I've never heard of a hammond overheating....
 
Having the back off accompishes a couple things.. as someone pointed out it's lighter to move, more places to grab if you don't have dollies.. however, I tend to think that there were a couple of more important aspects to playing with the back open. Obviously, you could see the performers feet if he was kicking pedals, and if they were a stand up player you simply had a better view.. It also gave more of a open-bottom "B3" look.  However, having an open back was also part of the show, and by that I mean it gave the instrument/artist an air of mystery/complexity.. the open back with all it's wires and exposed tonewheel assembly it had a simliar look to a moog modular with all it's knobs and wires.. it just looked "high tech".. (at least for the time)..   On that point there was a great organ player here in Canada, Bob Horne who played in a band called Foot In Cold Water, who completely removed the cabinet from his B3 and that was part of his thing..

It sounds logical at first but when you think about it a little further, why would a C3 overheat more than a B3 and you don't see backs off of B3's nearly as often as you do on C3s (C2s and CVs etc.)

In churches you will never see the backs off and most churches have C style cabs.

On the Hammond forum, where more tech and repair stuff is discussed, I have not heard anyone with a problem related to internal cabinet overheating. (I have a CV which has a completely different preamp so I don't have firsthand experience with C3s but FWIW my CV never had overheating problems with the back on...or off)

I could be wrong but, IMHO, I don't think overheating is a problem.
