Is a tablet going to have a quality audio interface and an output cable option better than a tinny 1/8" connector? Would you trust that on a gig? A notebook isn't likely to have a very good built-in audio interface, either. So you need to also think about an external audio interface that will connect to your device as well. You'll probably want this device to have MIDI connections to give you maximum connectivity to keyboards (and to let you connect both MIDI and audio to your device using a single USB connection, instead if having KB USB'd into one, interface into another, etc., which can increase latency issues.
My current MacBook Pro with its 'tiny' 1/8" output and two USB ports (no external interface of any kind) has been a champ for two years straight. This summer the roof has blown off my schedule and I'm averaging about 15 shows per month. It's feeding three controllers, is rock solid, and sounds awesome. I can't get out of a gig without someone coming up and asking what the hell I'm doing to get all that sound.
