Typically, the definition of latency (that we think about in the SW/Clone world) pertains to the time it takes between the note being struck and the sound being made.. in this case this is a controller and, in itself, it makes no sound.. so there can be no latency..
 
However, in this case, when they refer to 0 latency they may mean the time between the not being struck and the midi event being created.. which is a very different way of looking at things.. but then you have to ask yourself how is the midi note on event being created on this controller?  Is it from the first or last key contact, or some other device?  How are the midi note events created in this ORGANic 261 controller?  While the keyboard itself may have real Hammond keys and real Hammond key contacts.. that in itself does not entirely capture the feel of the keyboard.. we all know that there will be some latency between the midi note  on event being created (using whatever key contact or device that they use), and the creation of the sound coming from the host software.. and this amount of latency will have a direct affect on the feel of the keyboard.
 
Sorry.. but this really is stretching the truth.

I agree that latency can now be reduced to the point it is not noticeable, say 10 msecs or less but 0? And if not 0, why as a company selling a midi controller make the claim of 0 latency?
