The Velocity Offset parameter may help with that. It is in the Control menu (scroll up 6 times). This parameter lets you add some velocity to the number your playing generates (or subtract some if you are heavy handed). A lot of the attack harmonics aren't generated if the velocity value isn't near 127. That can make the notes sound a little dull and lifeless.

A guy used mine at a blues jam with the organ keyboard who was a blind keyboard player, and made the thing sing so that's probably my pitiful piano skills at work. But you have to tweak it, I don't think I found one organ preset I like in the thing!
