As you mention the fulcrum length is important and there's even more.
A real grand action accelerates the hammer whilst lifting the dampers and then at
the letoff point the jack releases the hammer just prior to the key hitting the
key bed. All that inertial stuff being there to accelerate and then being
let go, including the feel of the jack letting off, is the kind of thing that
you get to feel. If that weren't enough there's a repetition lever that
allows you to grab the hammer (with the key) prior to going through
a complete reset so you can restrike a note more rapidly. This latter
is strikingly (so to speak) noticeable in it's absence in electric piano
gear and in uprights as well.

Bottom line is that it's a lot easier to play advanced pieces well on a real
grand (if well regulated and all that) and it's almost offensive to hear sales
staff say "you can't tell the difference" when showing their "upright grand" or
"electric grand". Comparisons between people and inflatable dolls spring
instantly to mind.
