I've been using ARD (Apple Remote Desktop, now, simplified, builtin in
os x) for some ten years on a daily basis (not for gigging: server and
clients administration…), in wich way you consider it "not as good"
than the windows version? Basically never had problems with it.

Because midi over ip is built into the OS itself? ;) You can control a
VST running on a mac from another if you want, no support needed from
the DAW point of view, the remote controller is seen as a normal midi
port.
Not sure about how much cross platform this is, will have to check,
but I suspect it's entirely doable to send midi data from an ipad on
the same network.

Really? No 32 bit wrapper? And no "run in 32 bit mode" option in the
About window? Really asking, never tried on ML.

Also, used macs can be an option…
