Between the manuals are "thumb pistons", they can be individually programmed with custom presets. The tone tabs, arranged in a horseshoe shape to be reached easily by the player, are electro-pneumatic. Of course all presets can be manually overrun to make further changes on the fly. Modern electro-pneumatic church organs (which use different sounding pipe ranks - and "stops" instead of tone tabs - also have automatic presets). The entire system on theatre organs from the 1920s and 30s works with a complex matrix made of relays and literally miles of cables.
 
The pedals also have a few buttons, around the swell pedals for the right foot, but their functions are related to the pedals only. Many modern church organs have the same features.

Not being familiear with modern theater organs--I noticed that a number of times a large number of tabs switched position by themselves--were "presets" being activated with his feet?
