If a soundperson "likes to have a channel for organ and a channel for piano" I just say "OK. And can I have two more channels for my Stylophone and my Monotron?" They always back down and let me use my monitor amp/sub-mixer with a single mono DI box...
And don't get me started on expression pedals. It's funny to watch them trying to undo your footwork with the channel fader the first few times, but I now warn them in advance that if the organ's volume changes, it's INTENTIONAL!
The worst one was the time that the support band had previously used my keyboard channel for acoustic guitar. Between our sets I went up to the desk and casually said to the soundman "You know you left the compressor on and it's screwing with my piano sound? The look on the poor guy's face...

This one is easy. You tell him: No, he can't have that. Oh, you'll give him two channels, alright - they are called Left, and Right. Stick to your guns - unless you think this clown knows how to blend your boards better than you do. Trust me - he does not.
