I couldn't agree more... I once heard a Nashville producer say, after listening to a demo in which a piano part was overplayed, "man, that piano player sure is busy." His meaning was clear, but he did have that nice southern way of putting it.

Same can apply to any instrument of course, organ, guitar, etc.  Less really can be more. Sometimes all it takes is just a tasty little fill or passing chord to make all the difference and sound so sweet.
