It's interesting that there are different approaches to non-keyboard sounds. In my current band I use the following sounds:

Wurly about 50% of the time
Hammond/Leslie (various settings) about 45% of the time
Clavinet on two songs
Vibraslap sample played from my Nord Electro (my real vibraslap and percussion mic got stolen!)
Synth string pad from Roland VK-7 on one song
Grand piano (A-440 to help the horn section tune up!)

I haven't used a brass or realistic string sound since I was in an Elvis tribute band in about 1990!
