I've noticed you can get away with a fairly long delay, (more that 40 ms). If you're (I'm) playing measure(s) long pads it can be OK. As I play faster it's more and more critical so yeah, it depends. I think under 5 ms is almost unnoticeable for most playing.
I did an "experiment" with a tap delay echo unit years ago that would display the delay time in milliseconds. We messed around with it and tried to see how short we could get the delay time with two successive taps with one finger. A "casual" time was about 100 ms while, the fastest time we could get down to was right around 40 ms. ... and we really worked (read goofing off) at it. I don't know what relevance this has to latency but may give us a feel for how fast 100ms to 40ms is. I think I heard of the experiment originally being done to determine design parameters for switch bounce circuits.
