I'm interested in this as well (but the prices have been a stopper so far).
Max Tempia (one of my favorite italian hammond players currently alive) is currently gigging with something something like that (built by Fatar), but he doesn't play pedals a lot.

I had an interesting conversation on this topic this summer (when I also could finally try the pedalboard of a C3…in the past I only had few opportunities with spinet-like ones) with an hammond player who habitually use pedals. he strongly suggests to go for a full pedalboard if you want to use pedals a lot, since otherwise your leg will wear more easily. i'm merely reporting what he told me, i've no experience on the topic.
He also own a Viscount organ with a pedalboard, he said you can't connect it via midi to any instrument as it is but also added that he know a person who can modify it to make it work with any clone.

From the few times i tried pedals I was quite surprised to discover I could actually play them. I found the spinet-like ones much easier to handle, but i'm positive on the fact that, once your used to it, you'll end up being faster with a full pedalboard.
