From the mid 70's through the mid 80's I played out with various combinations of  B3's, Fender Rhodes, Leslies, Fender amps, a variety of string machines and synths, and a couple different acoustic-electric pianos.   
 
I guess my point is that you generally play what's available, what you can afford, and what is appropriate for whatever style of music you're playing.  In the 70's and 80's what was available was hardware and if you were a keyboard player and wanted to play out, that's what you played.  You carried the B and the Rhodes, and if there were steps or high stages or whatever you just dealt with it. 
 
Digital instruments have brought more choice to the gigging musician, but the bottom line usually will end up with the instrument of choice being the "real thing" if the band or artist can afford it, or if the "real thing" is part of the performance image. You probably won't see Grace Potter playing a Numa or Nord or SK1... you just won't.  And back in the day Jackson Browne would almost always play a Steinway or Baldwin grand, not a Rhodes.
 
A B3 clone, whether hardware or software, can't ever be a B3, nor can it be "better" than a B3 since it only is an emulation. Even if it were a perfect emulation it wouldn't be "better".... just the same, at least sonically.
 
It's fun haggling back and forth about "real" vs. "clone", but I'll  bet that B3's and Steinways will still be onstage and smokin' long after we've all gone to play in whatever venue the next world brings... and there just might be a B there too.
