I can't speak for Windows 7 for music machines as I haven't tried it yet.
But my DAW is on Windows XP and that machine has NEVER crashed in the 4
years since I set it up. Why? Because I stripped it down, uninstalled every
unnecessary thing, stopped all non-essential services, and keep it entirely
disconnected from the internet. I don't play games or run word processors
or anything else.

My DAW boots in about 15 seconds.

Now for purpose built stage devices to play VSTs, the better option is
likely Windows Embedded. It's designed to run purpose built hardware and is
stripped down even further - whole subsections of normal Windows are not
even installed. This OS runs in Crumar MOJO and Hamichord organs.
