Sounds like going from Tremolo to Stop and Chorus to Stop, etc... that would give you a slow ramp up and down. Unless they used a 125, but I would doubt that. Those are slow to ramp up and down, but the Leslie in the recording seems to produce the highs too well to be a 125.

I got the impression they mic'd up the horn and woofer areas of the Leslie separately and did some wide separation and/or Mid/Side technique voodoo.
