The Garageband Grand Piano is a bit thin, but the Classical Grand sounds pretty useable to me. And yes, the GB organ is currently the only worthwhile option or the iPad.
Regarding creating/multitracking some music, look into MusicStudio, it looks to be a bit deeper than the current version of Garageband. There's a free Lite version that will allow you to take it for a spin. (I downloaded it the other night but haven't had the time to try it yet.)
Sampletank has become very well-developed for iPad, beyond the initial package, you can buy expansion packs as you need them. The organ seems pretty lame, some of the other sounds are quite strong.
Also, if you're into synths and electronic music (definite possibilities for radio bumpers,etc), there are some fantastic synth apps, see: Alchemy, Sunrizer and Animoog. I've gotten way lost into the wee hours with those, all three are awesome and take full advantage of the touchscreen control possibilities - they are not just ported apps.
An IO Dock is definitely in my future, it really looks like they did it right. Let me know how it works out for you. Important: if your iPad is running iOS5, make sure you upgrade to iOS5.1, or you'll have issues with the Alesis dock.
