If you can cope with 8 note polyphony, you more than likely wont care about
it being true mono! This is the biggest limitation of garageband imo - the
organ is passable, and the rhodes and clavs are quite good. The acoustic
piano is weak, but better than many slightly older pianos / synths! 8 notes
polyphony isn't enough for sensible organ or piano playing though.
But to the mono issue - you need to mix them together, ideally with an
active device (mixer etc) but at a pinch you can combine the two channels
together and the iPad seems to be able to cope with it.
