On gigs I like speakers that have a nice sparkle (for lack of a better term) to the highs because it adds dimension to the piano sounds and they cut better in the mix. That same characteristic applied to an organ sound tends to make even a "well modeled" organ sound sound too bright on the high end. That's what I'm referring to.
