The bigger question is: Would Booker T., Tom Coster, etc. sign up for
such an 'eye test'? I've sold gear to a fair number of musicians by
now, and I've noticed that there are two kinds: the analytical ones,
and the emotional ones.

Guitarists are a great example. For every guitarist that bought a
Fender Strat, then changed the pickups, bridge, strings, etc. until
he/she was happy; there's another guitarist who bought a similar Strat,
hated it, and kept buying and selling guitars until she/he was
satisfied. So the question is, what kind of player is Booker T.? Is he
the kind who tweaks his gear until he's happy with it; or does he say to
the producer, "Man, that B-3's bad! We gotta find another one for the
session."

While you and I recognize the subtle differences, to many players, a
"Hammond Organ" is a B-3 + 122 Leslie. THey might not even recognize
the dry sound of the organ. To those players, the 'eye test' you
describe takes all the magic out of the test session. I suspect, based
on some of the fuzzy comments heard in the Keyboard review, that there
were at least a couple of that sort of players in the test group.
