I can envision having both. A touch screen and a real set of drawbars that are tied into eachother. The screen controlling software and effects, and?a feature that?adds effects/EQ on certain drawbars in any number of combinations. You can add distortion to the 5 1/3 for example and chorus or delay, flanger, stereo L&R to the 8, 4, 2, 1 bars.. Or change the drawbars to controll different models and brands of organ, strings and organ, a whole toys r us approach..

It would be a skill in itself. Imagine laying a finger positioning on the drawbar pads as quickly as playing a jazz staccato chord and it automatically and smoothly goes there. You could call it "playing the drawbars"

Then again it might feel awful to manipulate the harmonics this way. The only way to really know is to do it. Kind of the Galileo versus the Aristotle approach.
