I know exactly what you mean but often I have to cover some parts
using Roland xp and Motif for brass and strings. I was in a 10 piece
band in the 60's and loved having that kick-a horn section.
Now we are doing some of the same tunes with 5 pieces. Ain't Too Proud
To Beg, Knock On Wood, and Soul Man could be done without horn parts
but we try to do them as close to what people heard back then as we
can. That said, I do really enjoy just playing organ and piano. Back
in the 60's ALL keyboard parts were played on a Hammond in my group.
We would dream of someday having a portable acoustic piano sound.
