I think it is a matter of context and musical style. In a multi- keyboard setting, one might use the Hammond in a "synth patch" approach and needs to adjust parameters for each song (or even section), or wants to use the Hammond and leslie in a more innovative way.
I am not a purist; at the moment I play both gospel and blues with my XK-3 and I think of it as a real Hammond - I tweaked the parameters like key click to my taste and left them there, that's why I am looking for a realistic external leslie sim. I simply need a great sounding Hammond clone that looks, feels and sounds as close as possible to the real thing. I like the tried and true playing styles, including finding one leslie parameter setting I am comfortable with and that's it. The rest is switching from fast to slow at the exact right moments - I will never get tired of this. The only non-playing parameter (as opposed to drawbars, chorus/vib, percussion, etc.) I tweak is the amount of overdrive.
Now if I would play, say, in a prog rock band, tihngs would change a lot. The Hammond would be "raw" material for further tweaking and processing, and of course I would need to recall the exact settings - including the leslie.
.... I have yet to hear a Hammond through a leslie on medium speed, vibraphone style......
