My Roland VK88 comes with an expression with two momentary side switches. I can program tem to do whatever I want. I programmed them to run the leslie. Left is sow/ fast. Right is brake. I can't imagine an easier set up. I can slide my right foot to control the leslie while I am controlling the volme. Perhaps this idea could be used for the ventilator. They are momentary on switches.
