Some drivers with aluminum diaphragms work and sound just fine if padded
properly. Same true with symbiotic diaphragms.

Drivers with metal diaphragms suck for getting an authentic hammond
tone. Hammonds do not produce any frequencies above about 6-7 KHz. The
original Jensen V-15 uses a phenolic driver, and any replacement
driver should also, if you want it to sound authentic. If you are
going for a different tone or want to experiment, by all means try
anything you like.
