The black keys are never going to send note on/off information, though they may send program change info (I no longer have an XK3, so a present owner will have to testify to that).

The easy midi way is what you're talking about, always sending info, and just reaching for the knob. But it is so much more efficient and elegant frankly to have your XK3 send the appropriate program change/volume information. I don't remember the step-by-step, but honestly, open the book and it'll take you about 5 minutes to set up your first program, and each subsequent one will take a fraction of that. Then the nice thing is you won't have to have it sitting on top of your Xk3; you can leave it on your amp/leslie, in a little rack, or velcro it underneath your keyboard!
