I play the keyboards professionally, including gospel music. Here's what I would do:
I would record all songs of the band during rehearsal. An inexpensive mp3 recorder does the job just fine Then I would transcribe the chords at home for the organ with interesting lines and licks written out. I would pay attention to the guitar player if he/she does things like augmenting the fifth temporarily or throw-in a sus chord. If he/she does this always in the same place, you should write it down to avoid clashes. If it occurs randomly in certain places, you can either bring this to the guitarists attention (=please play it the exact same each time if possible) or write it into your chord sheet as "avoid note" situations if you feel uncomfortable asking this.
Also: if some of the guitar riffs are polyphonic, sometimes playing a static chord through the riffs does not work. You can either hang a drone note (common tone) over it, play the same pattern and notes (written-out in notation works best) or come up with a complementary riff.
It is also good to find out where are spaces for you to play melodic phrases (counterpoint or responses to the sung melody). The groove and harmony are already all there so you do not have to play chords all the time.
You might want to go 'easy' on your the left hand: be careful not to compete with the bass line, so your lowest note should be higher than the bass line.

I've recently been volunteered to play with a small praise band at church
(guitar, bass, drums, piano and now XK-3!).
I went to a rehearsal this week and found that they are playing with no
music, just some hastily scribbled chord charts along with the lyrics.
