You've come to the right place -- many experts lurking in this forum.
Here's my 2 cents:

Any midi-compatible keyboard will work.

Do you need to use the 2nd manual to create other sounds? Find a synth
you like and plug that in. If you just want organ, then all you need
is a midi controller.

Since the VK7 has "synth" type keys instead of the hammond "waterfall"
keys, that gives you a very wide set of options for 61-key midi
controllers, since nearly all of them have synth keys. If for some
reason you want the waterfall keys for your second manual, then your
options are narrower and more expensive - check out Doepfer for example.
