For the sake of an AB test-to check difference in tone, Leslie speed, C/V, key travel, it makes no difference.
Just for the record I tried headphones and then through a pair of small Yamaha powered speakers.

For a double manual organ-depending, again on how picky you are, this is probably a great rig.

As for pedals, there are some full pedal midi set-ups on the market. I don't recall names right off the bat. I haven't really shopped for that stuff.
I kicked pedals in a rock band for years.
I used the left foot only method as well as the two-foot method. I also had an extra drawbar wired to my B. I digress......
If you are kicking pedals you definitely want a full set. Once you get the hang of it you'll be frustrated by having only one octave.
You need a great bench at exactly the right height. And a good pair of shoes with heels.
