Hi Lou,
I run the sound from the stage, which sort of cuts out the middleman, but here are the tips we use:
1. The bass player goes out in the audience during the sound check and first song, and gives me a report. If he tells me anyone is too loud or soft, I change their setting by 3-5 dB and try again.
2. While the tone of the room may require significant changes to the PA volume and EQ, the settings for mic'ed instruments shouldn't change much from gig to gig. Learn to place the mics in the same position, and write down the mic locations, board levels, and EQ once you have it dialed in. I have everything memorized, and sound check takes under 3 minutes -- and we mic the entire band.
3. Once you have things down well, don't try to fix things like "ice pick guitar" and "too much bass" in the individual channels on a particular gig. Fix them in the PA EQ, because there are likely to be other, related problems going on in general.
