Yes, those cheapo MIDI controllers do work. I gigged with my laptop and a M-Audio Radium 61 for a while. Although I enjoyed the sound, I absolutely demolished the keybed (plastic) on the M-Audio. They're designed for guys with home studios and Reason and the like who like to twist knobs.

VB3, like B4 II, is pure PC software.

Actually, it *internally* runs B4 II! But since it has a MIDI ouput,
it can also control any external synth, including soft synths e.g. VB3.

If, for any reason (money, bulk...) you can't afford a Hammond console
clone, with 25 pedals and a swell, you can use an inexpensive
programmable control keyboard (e.g. Edirol PCR-800) + a swell pedal,
in tandem with your existing synth or master keyboard.

So you get all the essential interface features to play live
(drawbars, vibrato, percussion, rotary speakers etc.). Of course,
the ergonomy is somewhat behind a true console, but a good Hammond
organist will make good music with this, even without a pedalboard.
