Hey Mark,
The VK-8M has upper, lower, and pedal voices. The module can be set
to "single keyboard" mode (which just uses the upper voice)
or "sequencer" mode (where each voice is controlled by a different
MIDI channel). Page 20 of the user manual explains how to select the
mode. Page 46 explains how to set the MIDI channel for each voice.
You can download the user manual from the Roland website.

I'm surprised the folks at Roland couldn't help you...

By the way, I've been very pleased with my VK-8M. I also own a Korg
BX-3. I use the BX-3 when my band plays on larger stages (which is
almost never) and the VK-8M when we're crunched for space (which is
almost always). I have to admit, though, if Korg packaged their
clonewheel in a module, I'd probably sell the VK-8M.
