I have exactly the same 'problem' with my girlfriend. She is a
classical pianist, and I'd like her to sit in on my BX-3 for a few
songs when I switch to guitar.
I think 'Hammond Organ Complete' is required reading.
But one of the most important things is to try to teach them listening
skills. She is so used to reading the music, so used to playing the
melody.
The feel and soul of the Hammond IMO cannot be read, it can only be
learned by listening.
