Subject:half OT: how many volume pedals

Now I use 2 pedals: one for my hammond clone and one stereo to run my
piano p90 yamaha and Korg X3 in mono. I'm considering using one stereo
pedal at the end of the chain after my sub-mixer. Do you think it's
better to stop using volume pedal for a piano?
what are your setups?
