The GREEN MILL offers killer Hammond trios at least once a week; MARTYRS is a great room for jazz and rock: it's small, with fantastic sound and sightlines and great food and beer.
FITZGERALDS in Berwin offers great American roots rock on a nightly basis, again, great beer selection, and a really FANTASTIC cafe featuring cajun food.
JOES on Weed Street is a popular place for popular rock and country, but gets a little crowded (holds about 700people).
WEEDS is a funky little bar 2 blocks from there that I highly recommend visiting. Thursday nights is jazz night normally, featuring the John Baney Band, who have been playing there for 20 years. This address is 1555 N. Dayton (corner of Weed/Halsted/Clybourn).
Lots of great places in Chicago, but I can narrow it down when you know when you're coming by using the Chicago Reader. I'd be happy to help you out.
