I use an Evolution keyboard which accepts a sustain pedal that can be
assigned to send out midi cc messages. Set to 80 it controls
fast/slow by toggling between values 127 and 0 on each press of the
pedal.

If the pedal you're using is staying on fast only while your foot is
on the gas it sounds like removing your foot is triggering the
pedal's 0 value message, which of course is what a regular sustain
message does.

The VK8-M responds to values 0 through 127 so will spin slow and fast
and all points between. You could use the mod wheel and one of Midi
Solutions midi mappers to change the mod wheel's cc#1 to cc#80 if for
some reason this is more convenient than using the VK8-M's own hand
controllers, or it should be possible to use a latching switch
footpedal instead of a momentary pedal, so that one press will switch
on and hold, and a second press and release, will spin the rotors
down to slow.
