Hi Mike,

You only need one V5+ because it is a complete tone generator capable
of functioning with two 61 note manuals and a set of pedals
simultaneously. You can use one of the old V5s as a drawbar
controller for the lower manual if you'd like. You'd put it in line
with the lower keyboard, set it to the lower keyboard's channel and
connect the controller V5's output to a MIDI merge along with your
upper keyboard. The merged output should be connected to the V5+.

It's undesirable to run two V5+s because there's no way to guarantee
their phase with respect to each other. One generator with two
manuals and pedals is the way to go.
