I also was thrilled to find out my VK-8 had this feature. I midied my old, trusty DX-7 in and voila a lower manual. However doubts started creeping in when I found that when I did swooping glisses ala Lord or Emerson on that 'lower manual' the midi crashed often causing stuck notes. They were easily cleared by hitting the sustain pedal but it was still not cool. Also, I sometimes play with a band that tunes down to "D". Try as I might (even with a call to Roland)I could not get the lower manual to do so.
As for sound - I'm happiest when playing the VK-8 through my real Leslie 770. I'm still tweaking to get a decent sound out of the abbreviated setup (i.e. keyboard and amp only) but, basically, am still pretty happy with the VK-8.
Has anybody installed the latest software upgrade? I've downloaded it from Rland but have not had time to investigate as yet. What does it 'fix'?

"Yes, I did the exact same thing myself in the past, using a CX-3 and a Fatar
CMS-161. However, I want the two manuals about 1.5-2" apart vertically,
and I want the tails of the upper keys right above the heads of the lower keys;
in short, just like a B-3. With the right gear, one can get pretty close to the
scenario with two keyboards, but my BX-3 can always get closer."
