I hate to admit this, but what exactly are "waterfall"
keys? I'm not quite sure I have an accurate handle on
what they are.

'Waterfall' keys are the squared off keys like the ones on the real Hammond console organs - not the overhanging ones like on just about ALL synths, etc.
