For slowing down songs to learn a solo I've started using "The Amazing Slow
Downer":

Its available for Mac and PC and also converts files to different formats. It
works on WAV and MP3 files and has very good sound quality.

For converting a MIDI file to sheet music I've had good luck with PrintMusic
by Coda. Its sort of a Finale-lite. If the MIDI file was created using different
instrument parts there is a good chance that PrintMusic will be able to
interpret it. You can also extract the parts so you get just the keyboard part.
