You are spot on Claire. I have found that many keyboards with stereo samples e.g. piano, sound poor when 'summed' to mono. If your keyboard does other sounds as well as organ the chances are that these other sounds include a stereo sampled piano etc.
It's stereo all the time for me even if it does bring a few inconveniences along with it.

I'm a bit behind the times with this somewhat belated post, but here
goes.....
I've run B4 in single channel, mono and stereo. Stereo is definately the
best if you can be bothered. Single channel is OK too and sometimes the
trade off in complexity, boxes, etc. is worth it. You choose your
compromises.
What I've learned not to do however, in situations where you want/need a
single feed, is to sum, or connect the left and right together. i.e. make a
'mono' feed by connecting both stereo feeds together. If you need a single
feed, say for a mono PA or a single speaker box use either the left channel
only, or the right channel only, - not both......
If you use both, the leslie sim gets all muddy, intermodulated, phasing
cancellations etc. etc. and sounds (to my ears anyway) much worse than
either 'left' channel or 'right' channel by themselves.
The technical reasons for this would also seem to apply to any other
electronic type Leslie sim....
(I can't comment on pianos though... sorry... This is obviously not
applicable if the stereo feed from your piano sends high notes to one side
and bass notes to the other......)
