The Roland PK-5 MIDI pedalboard has a monophonic mode where last
pedal played will be cancelled when the next one is played. When
used with a sound that decays to silence you will get the same
effect as a Hammond pedal sustain add-on, which is presumably what
you are after.

However, the MP117 does not appear to have such a mode, nor do the
notes on the V5 offer such a decay characteristic. The XB-2 did
though for its sins, so maybe a module such as the XM-1 would. In
other words a PK-5 plus an XM-1 may do the trick
