Subject:MIDI --> Notation conversion?

Situation: I own several MIDI-Files of my favorite (organ) groups to play
along. They are most in GM and a few in Extenden Format. The tracks are the usual bass, guitar(s), key(s), rythm and maybe a "vocal" track.

Before playing I edit the tracks to match my best voices on the YAMAHA
PSR-740 and lower down the organ volume to play along.

Problem: Some professional plays very tricky organ licks and (for me)
unusual chord changes. I need too much time and repetitions of the same
parts to develop the right notation alone by my ears.

Qustion: Do you know some software solution to convert the MIDI format to a track by track notation, also including chord nomination? It would help alot for my rehersals.
