Using a standalone VST host (AudioMulch, Chainer, Steinberg V-Stack), you could assign the different instruments to receive on different midi channels, and assign different zones on your controller keyboard to different midi channels. That way you could layer the patches at will, but this assumes your MIDI controller has zone capability. Or you could just use more than one keyboard... :-)

P.S. You could also use a VST compatible sequencing software such as Logic, Sonar, etc. but I have found these to be a little unwieldy in live performance situations.
