If you are using modern standards based MIDI gear MIDI latency shouldn't be an issue. Usually MIDI IN is for input from an external device, MIDI OUT is for output of MIDI messages from that particular module only, and MIDI THRU merges the incoming MIDI messages with the internally generated ones. Of course, depending on the MIDI gear you are using, these ports can be changed in function, so check the documentation for each of your products. But in answer to your question, if each device supports MIDI IN on the in port and MIDI IN + OUT for the THRU port it should work fine. Like I said, these names can be misleading or customized on different products, so check it out.
