Yes, I too have had some problems with my VK-7. I presume mine is a '97 model, and I bought it used in '99. The guy I bought it from warned me that after being turned on for about 30 minutes, the LED screen will go dim, then blank, the unit will lose sound (signal) and then go back to the default mode from when you first turn it on...(11-VK Organ)...which sounds like a clean, jazz, Jimmy Smith 888------ setting.

This can be very annoying when I'm at a live gig with one of my own customized settings, and it does this in the middle of a keyboard solo.

The guy gave me a short list of people in an area about an hour and a half drive from me that could help, but the situation never seemed dire enough to pursue. I've just learned to live with the VK-7 ROLLING (or should I say Roland) BLACKOUTS!

As for Leslie Simulation. I think I've got the old (1.05) version in mine (from what you described) because I'm fairly happy with the factory simulation, barring small parameter changes I've made to alter it to my taste.
