It's a bit of both. The original tonewheel Hammonds (B-3, C-3, A-100
etc.) had true waterfall keys, so wanting them on one's clone is to
achieve that authenticity. As for feel, they allow for quick, clean
smears and wipes up and down the keys, which are not nearly as
comfortable on a synth keyboard or weighted piano keyboard. The goal
is to keep one's palm from getting all bashed up during such
pyrotechnics.
The v1.0 CX-3 keys have a little lip that is hardly noticeable and
smears feel fine. The new keys probably look cooler and might feel a
little better as well.
You may want to do a side-by-side with your VK7 and a new VK8 to see
what you think. IMHO, the VK7 keyboard is very nice indeed.
Ruggedly robust, but lacking the waterfall, it is still a great feel.
