So I ended up with a used Roland A70, which has a MOD wheel, a Pitch-Bend
wheel, AND one of those combination thingees. And I was able to add an
expansion board that turned it into a synth as well.

You definitely make the right choice with the A70. It's got tons of MIDI
functionality as well as a great solid feel with a very robust action. The
expansion board adds some cool sounds as well. A very useable piano with
some other useable sounds as well. Fairly lightweight for gigs as well.
